3 hake fillets cut into even fish finger shaped portions
5 tbs or 60g of ground almonds
2 tbs or 24g of gram (chickpea) flour
2 tbs or 63g of Parmesan cheese
1 tsp cayenne pepper
1 tsp onion salt
1 tsp garlic salt
Zest of half a lemon
1/2 tsp thyme (can use dried if you don’t have fresh)
Pinch of salt
Big pinch of black pepper
Knob of butter
Tbs of rapeseed oil
You need 2 bowls, a plate, a frying pan, and an oven dish big enough to hold all of your fish fingers. This may seem like waaayy too much effort, but this meal is actually very quick to make and the taste is worth it.
In one of your bowls, add your eggs and beat them together. In the second bowl add your gram flour, ground almonds and all the seasoning. Your third plate will hold all of your seasoned fish fingers before going into the oven cooking (which should be pre-heated at 180 degrees).
Once your three separate dishes are prepared it is just a case of dipping the fish in the egg wash, then in to the seasoning, making sure it is well covered, and then placing on a plate ready to cook.
Once all your fish is ready, add a tablespoon of rapeseed oil in a frying pan with a knob of butter. Add a few pieces of fish at a time, browning on all sides, but not cooking the fish. Once you have browned all the fish, place on your oven proof dish and cook for 6 min.
