One pot wonder #2- Spicy sardines and chickpeas

Serves 2 (Although I have been known to eat the whole lot!)

Ingredients

2x Sardines In Tomato Sauce 120G

3-4 cloves of garlic – or more!

1 red onion

1 tsp chilli powder

2x tins of chick peas 400g

Chopped Tomatoes 400g

Splash of apple cider vinegar

Large pinch of parsley

Squeeze tomato puree

Salt and pepper

Method

This is not the prettiest dish to look at, but it’s quick, full of flavour and probably one of the cheapest meals to cook. I do however advise opening a window otherwise there will be a fairly strong fish smell wafting through your house!

Finely slice the red onion and garlic (the more the better!!) adding the onions to a frying pan with a tablespoon of rapeseed oil and gently sweating for 5-6 mins – dont rush this process, well carmelised onions are is the first and possibly the most important step! Once soft and brown, add your garlic and cook for a further 2-3 mins before adding the chili powder (again in my mind, the more the better!). Cook this for another 1-2 mins and then add the puree, and the tinned tomatoes, season with salt and pepper, and cook on a low heat for 5 mins.

Add the chick peas, the sardines and cook for a further 2-3 minutes, mixing well into the tomato sauce. Finally, add a tablespoon of apple cider vinegar, the parsley and again, mix well! Add more salt, pepper and vinegar to taste!

This is best served with a slice of brown crusty bread!
