Simple dinner of Penne Arrabiata

When short of time, this is an incredibly quick and satisfying dinner.. and all ready in about 15 mins.

Serves 4 

Cost per person £0.38

Ingredients

Large tablespoon of rapeseed oil

4x large cloves of garlic

Finely diced chilli (leave this out if you dont like it spicy)

Large pinch of chilli flakes

2x tins of plum tomatoes

1/3 tsp spoon of sugar

1 tbsp of tomato puree

Handful of diced basil

Large pinch of salt and pepper

Method 

 

 

Get a saucepan of heavily salted water on to boil. Whilst waiting for the water to heat, in a frying pan add the rapeseed oil and the finely diced garlic and both types of chilli.

Once the water is boiling, add two handfuls of pasta per person.

Cook the garlic and chilli in the oil, adding the tinned tomatoes just before the garlic goes brown. Once the tomatoes are boiling add in the sugar, puree, salt and pepper and simmer on a medium / low heat until the pasta is cooked (roughly 8 mins).

Once the pasta is cooked, drain it and add to the tomato sauce. Add the basil (I had some in the freezer) and serve!
